  1. In a medium bowl, combine turkey, brown sugar, sage, salt, paprika, red pepper flakes, fennel seeds, and garlic powder with a fork or your hands until evenly combined. Using damp hands, form turkey mixture into 8 thin patties about 3″ in diameter and 1/4″ thick (the meat will puff up in the air fryer).
  2. Grease an air-fryer basket with cooking spray. Working in batches, arrange patties in basket, spacing about 1/4″ apart (do not overcrowd). Cook at 400°, flipping patties halfway through, until golden and crisp, 5 to 8 minutes.
