Winter mornings are synonymous to this delicious, spiced meat broth. Simmered overnight in giant pots, the dish gets it warming properties from the marrow and juices oozing out of the bones. Best served with khameeri roti and soft naans, this delight is garnished with chopped coriander and julienned ginger. Said to be developed during the Mughal era, this dish has remained to be an absolute winter breakfast.

This fermented gruel is made up of jowar or bajra flour is a staple breakfast in Winters in some parts of Rajasthan and Gujarat. When jowar or bajra flour is mixed with buttermilk and left in earthen pots for hours and seasoned with salt and other spices, Raab happens. There is an interesting thing about this winter delight. While a cup bowl of raab is served in winters, it is served cold in summers. Works like magic in both the seasons.
Dadoh must have winter special breakfast in Sindhi families. This has patted jowar rotis mixed with green chilies, chopped onions, garlic and freshly chopped coriander. Sindhi dishes are loved because of their simplicity and amalgamation of flavours and this dish is yet another example of how beautiful this cuisine is.
Another dish that conquers the breakfast table in winters is paaya or what we call as trotters’ soup. This gelatinous soup is slow cooked on flame for several hours with a lot of spices and served with soft naan. Believe me, this could be the ideal healthy breakfast for winter mornings. Parisis also make a special kharia ni jelly made up of goat or lamb trotters with a brandy splash for breakfast.
Paranthas are the king of Punjabi breakfast, and we know it. Though we can have parathas the entire year, there are some winter special parathas that we all crave for. Some parathas made up of bathua, radish, methi and matar comes only in winter and make our morning even better.
